Barbara crafts cow's-milk cheeses in the French style: Brie, Camembert, Coulommier, Chaource, and St. Maure.  Mozarella, both plain and herbed, and Greek yogurt are also offered.  With the whey left over from the cheesemaking, Barbara makes delicious whey breads.  When she's not making cheese, Barbara roams the central Maine woods in search of the finest edible mushrooms (and yes, she is an expert).

Echo Ridge cheeses are on the menu at select Maine restaurants and have been highlighted in Maine magazine.
